Summer pasta with pink sauce
Ingredients for 4 people

400 gr of pipe pasta; for the red sauce: a little onion, 500 gr of tomato sauce, extra-virgin olive oil, salt; for the pink sauce: 200 gr of tomato sauce, 200 gr. of mayonnaise, 200 gr. of sour cream, 20 sliced black olives, 200 gr. of diced ‘Romano Mainelli’ ham.

Preparation

The pink sauce should be prepared in advance to let the flavours mix perfectly. As for the red sauce: simmer a few slices of onion in a little oil and then remove it from the pan, pour the tomato sauce, salt and let cook for 15 minutes, adding a little water to adjust the thickness. Remove from the fie and cool off. As for the pink sauce: mix all the ingredients and put the mix in the fridge. The sauce must be cold when the time comes to use it. Cook the pasta in plenty of water, strain well and immediately add the pink sauce. Serve immediately. The pasta will be lukewarm and soft, ideal for the summer.
