Ingredients for 4 people

A roll of puff pastry already flattened, half a leek, three small carrots and four medium diced courgettes, 2 spoons of grated cheese, 5 this slices of ‘Romano Mainelli’ Ungherese salami, also diced, two eggs, salt and pepper.

Preparation

Simmer the sliced leek in a pan, then add the diced carrots and courgettes, finish with salt and pepper. Cook for a few minutes and add some water if needed for ideal cooking. Finally, the mix must be very dry. Le it cool off. Add the diced Ungherese salami and the grated cheese, them mix everything with two whole eggs. Put the puff pastry in a 30-cm diameter baking pan. Make sure you leave the baking paper on, it will be easier to take the quiche off the pan. Pour the mix onto the pastry and level it. Fold the edges of the puff pastry inwards. Bake for 25 minutes at 200°C making sure the over fan is on.
